After Domaine Lucien Boillot & Fils was divided between Lucien’s sons, Louis and Pierre, Louis Boillot set up his own domaine in Chambolle-Musigny. The domaine has holdings in the Cote de Nuits as well as the Cote de Beaune, totalling 7 hectares of vineyards with as many as 16 appellations in Gevrey-Chambertin, Volnay, Pommard, Chambolle-Musigny, Nuits-St-Georges and Fixin. Some of the Premier Cru sites Boillot cares for includes Champonnet in Gevrey-Chambertin, Les Pruliers in Nuits-St-Georges and Les Brouillards in Volnay. The only white Premier Cru the domaine produces is from Meursault Blagny in the Cote de Beaune. The domaine shares the newly built cellar with Louis’ wife, Ghislaine Barthod from the domaine of her name, however the two domaines are managed independently with their wines vinified separately. Boillot’s vineyards are managed and farmed following the principles of lutte raisonee, meaning there is little intervention and fewer chemicals used. The grapes are destemmed before a cold pre-fermentation maceration for four to six days. Favouring gentle extraction and a minimum of new oak, Boillot is an advocate of classical Burgundy that is gentle, subtle and sensual, with the complexity of his wines only growing with age. Ghislaine and Louis’ son Clement now oversees the majority of the domaine, whilst Louis focusses on the viticultural side of the business.
