The truffles are supplied by the UK’s leading truffle curator, who works with the top restaurants in the country, so you can be assured that the delicacies on your plate have just been hunted in the woods days ago. Winter black truffles are known for their rich, decadent and utterly delicious flavour. As for the white counterparts, their aroma is praised by chefs around the world and is certainly beyond compare. These types of truffles are usually served raw – grated or sliced over a dish (traditionally, egg, pasta or risotto).
 
Let us add a few words on the wines, selected by our team of experts, to create perfect pairings with your truffle delights.

Tignanello is a legendary name in Italian wine-making and undoubtedly one of the most sought-after Italian reds. This wine was the first in Tuscany to combine Sangiovese with non-traditional international varieties, effectively creating the Super Tuscan category. Fruit comes from a 57-hectare section of the Tenuta Tignanello from a vineyard located 390 metres above sea level, with limestone rock and soils of marine origin. The wine is fermented in oak tanks and aged up to 16 months in a combination of mostly French and some Hungarian oak. Critics describe the 2017 vintage as “dark, exuberant and inviting” (96 pts, RP Wine Advocate), “a dense, really pinpointed red with plums and hazelnuts. Full-bodied and very polished with fine, creamy tannins and a long, flavorful finish” (96 pts, James Suckling). A wine that is just entering its drinking window now and certainly has a very long aging potential.
 
Prunotto Barolo Bussia 2015 comes from the most precious jewel in Prunotto’s crown of vineyards and all within Piedmont’s best appelations: Vigna Colonnello, in the Bussia sub-region. The vineyard, located in a natural amphitheater with mixed soils of clay, tufa and sand, is perfect for Nebbiolo. Grapes are all hand-harvested before maceration and fermentation in stainless steel tanks. The wine is aged in oak barrels for about 18 months. The 2015 release is a “really fresh and delicious Barolo” showing “bright red cherries with a neat and approachable, fruit-forward feel that is all about charm” (93 pts, James Suckling). It is also characterized by “a dusty mineral note of crushed seashell or slate that cuts through the entirety of this wine. That dusty, almost salty characteristic is accompanied by wild berry, wild rose, dark spice and licorice”. 94 pts, The Wine Advocate.
 
Antinori Cervaro Della Sala Bianco 2018 earned its place in the pantheon of the greatest white wines. It’s a beautiful full-bodied blend of Grechetto and Chardonnay, powerful enough to withstand the truffles flavour. Coming from a Marchesi Antinori estate in Umbria, this blend shows a complex nose with “stone, sliced cooked apple and hints of toffee. Full-bodied, with a density and freshness and liveliness. Vivid and energetic”. 96 pts, James Suckling.
